This week is another crock-pot recipe. They are so easy to make I just cant stop using them!!! Anyhow, this week is a pasta dish and its very simple to make.
Ingredients:
3 Chicken breasts
1 can Cream of Chicken ( i used 98%fat free)
1 1/2 cups of Chicken Broth (it called for 1/2 cup buti read it wrong this morning so I used the larger amount and it turned out yummy)
1 packet of Italian Dressing Mix
8oz cream cheese ( i used fat free)
Cooked Pasta--we used bow tie pasta
Optional: Real Bacon Bits---we added this to give it a little smoky flavor.
Place the chicken in the crock-pot, Cover with cream of chicken, chicken broth, and Italian dressing mix. Cook on Low for 6 hours or until chicken is done. Shred chicken, place back in pot, add cream cheese and allow to cook another 30 minutes. (this is also were we added the real bacon bits) Cook your pasta and then either serve the mixture over the pasta OR mix it in the crock pot and serve.
Serving Size: 1 cup

Weekly Weigh-In Update
This past week was a great week, not only in weigh-in but also with fun stuff! We went to the State Fair two days in a row and enjoyed lots of yummy food but walked A LOT!!!
Anyhow, weight watchers was good tonight. A lady there lost 77 pounds and she was talking about what she eats. She told us about her meals yesterday. She has a bowl of green beans for lunch yesterday and then she had sweet peas for supper. Now in my opinion this is not eating to me. I enjoy pork, read meat, chicken--REAL FOOD!!! So in my opinion she needs to eat and she will still lose weight.
So how did I do on the scale this week.......FOUR pounds!!!!! I was excited. I have been measuring and weighing my food to make sure I am getting the best bang for my points!!!
My total so far is 72.6 pounds!!!

Weekly Recipe: Pork Chili Express (SPICY!)
This past weekend we went to the State Fair and at a booth promoting Pork we picked up some recipes. This is one that was on the pamphlet. It is SPICY but it is good. Don't be stingy with the salt, it needs it!! So here is the recipe:
1 pound lean ground pork
1 15oz can chili beans in chili sauce, undrained
2 14.5 oz cans diced tomatoes in sauce
1 1/2 cups water
1 tbsp chili powder
1 1/2 tsp ground cinnamon
1/2 tsp dried oregano leaves
Salt to taste
Brown the ground pork over medium high hear in a skillet for three to four minutes until pork is no longer pink. Break the pork into small crumbles. Drain and discard any juices.
Stir chili beans, tomatoes, water, chili powder, cinnamon, and oregano into pork in the skillet. Reduce heat to medium. Leave uncovered and simmer 3 to 5 minutes or until desired consistency.
Another option is cook the pork in a skillet. Put all other ingredients into a crock pot and add pork once cooked. Simmer on low all day in the crock pot.
We added a can of kidney beans as well b/c I thought it needed a few more beans. I love chili with beans!!!
Also we added sour cream and cheese on top. Super yummy!!
Servings: 6, 1 cup servings

Our Little Roddy Boy
Roddy is growing so fast. He is now 7 pounds and has lost 4 teeth--well that's all we have found. He loves to go outside in the morning and announce himself---WOOF WOOF WOOF.....very loud when its 7:30am and you are just waking up yourself. He is chewing on EVERYTHING b/c he is teething and he favorite play time is at night. He likes to chew on your hands and he loved to run around the house for exercise. He still loves gerald and he plays with dino too. He has been chewing ALOT on his pig ear and he seems to like it most when standing on your feet. He usually does this to Rob and its so cute. He is no longer going to the vet to get shots b/c he is caught up and will only need to go once a year for check ups and rabies shots. Thank goodness b/c my pocket book was getting too tight!!!
Roddy had his uncle Chewie visit for a week and he enjoyed playing with him. He loved climbing on his head chewing on him too. Chewie was ready to go when mommy Barbara came back from the beach to get him. We loved having Chewie but he was ready to go home to his mom.
We enjoy having Roddy around b/c he is very loving but also super playful. I enjoy watching him change. He is getting bigger and bigger, longer and longer. I want him to stop growing at times b/c I want to be super small forever. He wont get much bigger than what he is now though.

Recipe: Super Mex Chicken Soup
This is another crock pot creation. It was called super yummy, super easy crock pot soup but Rob renamed it to Super Mex Chicken Soup. Its supposed to be a soup but I had it more of a topping than soup. I used three chicken breast instead of two so I think if i had used the two it would have been more soup-like. I enjoyed mine over baked tortilla chips but Rob opted for his over rice and loved it. Here is the recipe:
one can of rotel ( we used orginal)
one can of corn
one can of black beans drained
two chicken breast

1 teaspoon chili powder
1 teaspoon onion powder
one packet of ranch dressing mix
Place the chicken in the crock pot, pour the mixture of everything over it and let it cook.

Weight Watchers Update
I have a goal to get under a certain number and guess what?!?!? I DID IT!!! I am finally under this BIG number that I will reveal soon. I was so excited I called Rob and said to break out the bubbly!!! HA HA! Any how, my weight loss was 1 pound and my total is now 68.8!!! So that 75 pounds is inching closer and closer. This week we have lots to look forward to, like the state fair and I will be enjoying it!!!

WW update
Last week at WW was great b/c I had a loss of 3.4 pounds!!! This week though was full of goodies from the Orangeburg County Fair, a Tastefully Simple Party, and fun!!! So needless today I did have a small gain this week of .4 pounds. Now that made me mad b/c I am wanting to get to my 75 pound goal sooooo bad. At this way in I am at 67.8 pounds lost--AWESOME. I will make my goal just not sure if it will be by November, maybe it should be the end of November :O)!

Crock Pot Pulled Pork
I love to cook, I love to eat, and I love to share that with others. So every week we are going to make a new recipe and I am going to share it here on my blog. This weeks recipe is from Donna Mulligan. Donna attends Catawba Baptist in Lancaster and when we went there for Homecoming a few weeks ago so made some AWESOME pulled pork in the crock-pot. So that is what we are making--Crock Pot Pulled Pork.
Here is the recipe:
Boston Butt (Pork Shoulder)--we used a 6lb
2 packs of McCormick Seasoning Pack for BBQ Pulled Pork for the Slow Cooker
1 cup Ketchup
2/3 cup cider vinegar
1 cup brown sugar
Mix the seasoning pack, ketchup, vinegar, and sugar together.
Put the pork in the crock pot and then pour the mixture over the pork.
After its done cooking, set it on a tray & let it cool until you can pull it apart. Then shred the pork off of the bone. After shredding the pork, put it back in the sauce in the crock-pot. Let it warm back through then ENJOY!!!
This goes great on a sandwich, over rice, anything. Its super yummy. The six pound makes a TON so if its just two of you a three pound would work. I could find one smaller than six at our Bi-Lo but who knows maybe they have them. One packet of seasoning would work well with a three pounds and then of course adjust the measurements of the other ingredients too. The recipe is on the back of the pack of seasoning mix too :O)!

Weight Watchers Update
October is a busy, busy month for me and I am trying to stay on track with my eating and exercising. This month we have the county fair and state fair. I will be having some fried goodness for sure!!
Back to the weigh-in. This past week I was very diligent about tracking my food and getting in my exercise. I went to the gym four days and for an hour each time. Dedication is my middle name this week!! :O) I tracked everything too, ate when I was hungry and didn't snack much at all.
So did all the dedication pay off?? why, yes it did!! I lost 3.4 pounds this week..WAHOOOO. My total is 68.2 pounds lost!AWESOME!!!!
My total for Lose For Good campaign is 7.6 pounds of food. WOW, that is great!! Here is a pic of that amount of food....
So I am going to keep on tracking and do the best I can b/c my health is important and I want to be around for a long time.
